Lemon Butter Cookies

- COOKIE:
- 1 cup salted butter, softened
- 1 cup powdered sugar
- 1¼ tbsp fresh lemon zest
- 1½ tbsp fresh lemon juice
- 2 cups flour
- ½ tsp salt
- ICING:
- 1 cup powdered sugar
- 1½ tbsp fresh lemon juice
- 2 tbsp butter, softened ( I do partially melted...it is easier to stir in)
- Fresh lemon zest for garnish, if desired
- Preheat oven to 350 degrees.
- In a large bowl, beat together the butter and powdered sugar.
- Add the lemon zest and lemon juice and mix on medium until light and fluffy.
- Add flour and salt,
- Mix until just combined
- Batter will seem crumbly
- Form balls about 1½ tsp big and place on cookie sheet evenly spaced apart
- If you are having trouble forming the cookie balls, put flour on your hands to roll the dough
- Press down on each ball lightly to gently flatten
- Bake for 10-12 minutes or until set in the middle and light brown on the bottom
- Let rest on cookie sheet for one minute when removed from the oven
- Transfer to a cooling rack
- Let cool completely
- Meanwhile, start prepping frosting.
- Combine sugar, lemon juice and butter and whisk until lumps disappear.
- Dollop a small amount on each cookie and spread
- Grate lemon zest if desired
- Let cookies rest until frosting is set.
- Enjoy!
